Olive oil is a vegetable oil that is used primarily in the culinary arts. It is obtained from the fruit of the olive tree.
The oil is extracted from ripe olives that have been grown between six to eight months; timeframe in which olives contain the greatest amount of oils. This tends to happen towards the end of fall.
The olives are applied pressure for the first time with the purpose of extracting all of its juice. Our quality control is mainly defined by this first process. For this reason, these first steps are highly monitored and handled with care. The quality of an olive stands out by its organoleptic properties.and its fatty acids content.
Thanks to its high content of monoinsaturated fatty acids (oleic acids) and polyunsaturated (linoleic acid), this oil provides important benefits such as:
– Increasing levels of cholesterol HDL (good)
– Decreasing levels of cholesterol LDL-e (bad)
– Helping control arterial hypertension
– Reducing the risk of developing thrombosis and diabetes
